Taco Night Dinner Yorkies

Skip the tortillas and taco shells this week and dress up taco night with this traditional Sunday supper favourite.

Ingredients

  • 1 1/2 cups (375 mL) milk
  • 4 eggs
  • 1/4 cup (60 mL) butter, melted and cooled
  • 1 1/3 cups (325 mL) all-purpose flour
  • 1/2 tsp (2 mL) salt
  • 1/4 cup (60 mL) vegetable oil
  • 1 tbsp (15 mL) vegetable oil
  • 1 lb (500 g) ground beef
  • 1 pkg (24 g) Old El Paso™ Taco Seasoning Mix
  • 1/4 tsp (1 mL) salt
  • 1 cup (250 mL) shredded Cheddar cheese
  • 1/3 cup (75 mL) sour cream
  • 1 tomato, seeded and diced
  • 2 green onions, finely chopped

    Yorkshire Pudding: Preheat oven to 450˚F (230˚C). In blender, combine milk, eggs and butter; purée until combined. Add flour and salt; blend for about 10 seconds or just until mixture is combined. Set aside.

    Divide oil evenly among 12-cup muffin tin. Heat in oven for about 10 minutes or until oil is almost smoking. Working quickly and wearing oven mitts, remove muffin tin from oven. Pour batter into muffin cups, about two-thirds full. Quickly return to oven; bake for about 25 minutes or until puffed and golden (do not open oven door).

    Filling: Meanwhile, heat oil in large nonstick skillet set over medium-high heat. Crumble in beef; cook for about 5 minutes or until browned. Stir in seasoning mix and salt.

    As soon as popovers come out of the oven, pierce each one with tip of thin knife to release air. Flip pan over to release popovers.

    Fill each popover with ground beef. Garnish with Cheddar, sour cream, tomato and green onions. Serve immediately.

Expert Tips

  • Tip 1
    Do not open the oven while the popovers are baking, as this will cause them to fall (and look more like pancakes) without the desired light and airy texture.
