Impossibly Easy Salmon Asparagus Bake

Ingredients

  • 1 lb (500 g) asparagus, cut into bite size pieces
  • 1/2 cup (125 mL) sliced green onions
  • 3 cups (750 mL) shredded Swiss cheese
  • 2 cans (213 g each) salmon, drained and flaked
  • 1 1/2 cups (375 mL) Bisquick* Mix
  • 1 1/2 cups (375 mL) milk
  • 1 tbsp (15 mL) chopped fresh or 1 tsp (5 mL) dried basil leaves
  • 1/4 tsp (1 mL) pepper
  • 4 eggs

Steps

    Heat oven to 400ºF. Spray rectangular baking dish, 13x9x2 inches, with nonstick cooking spray. Sprinkle asparagus, onions, 1 1/2 cups of the cheese and the salmon in baking dish.

    Stir remaining ingredients except cheese until blended. Pour into baking dish.

    Bake 40 to 45 minutes or until knife inserted in centre comes out clean. Sprinkle with remaining 1 1/2 cups cheese. Bake about 2 minutes or until cheese is melted. Cool 5 minutes before cutting.

    Do-Ahead Tip : Cover the assembled dish and refrigerate overnight. To serve, uncover and bake 50 to 55 minutes.
