Ingredients

  • 2 cups long grain white rice
  • 4 cups water
  • 1 bay leaf
  • 1/4 cup diced cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon olive oil
  • 1 teaspoon salt

Steps

    Add rice, water, and bay leaf to medium saucepan. Bring to a boil.

    Reduce to a simmer and cover. Cook for 15 minutes or until water has absorbed.

    Remove from heat and let sit, covered, for 5 minutes.

    Remove bay leaf from rice and discard. Stir in cilantro, lime juice, olive oil, and salt.
