Easy Vegetable Fried Rice

This is the quickest way to make fried rice without any extra ingredients. To kick it up a notch, add a squeeze of Sriracha to taste. It’s an excellent vegetarian main dish, but you can easily serve it with chicken or shrimp for an added boost of protein.

Ingredients

  • 1/4 cup vegetable oil
  • 3 eggs, slightly beaten
  • 2 cups frozen broccoli stir-fry vegetables
  • 2 cloves garlic, finely chopped
  • 4 cups cooked white rice
  • 1/3 cup soy sauce

    In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add eggs; cook and stir until eggs are set. Remove to plate; keep warm.

    In same skillet, heat remaining 3 tablespoons oil over medium-high heat. Add frozen stir-fry vegetables and garlic; cook 4 to 6 minutes, stirring occasionally, until vegetables are heated. Stir in eggs, rice and soy sauce; cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.

    Cooked brown rice can be substituted for the white rice in this recipe.
