This skillet dinner has all of your favourite burrito ingredients, but ditches the fussy prep — it goes from stove to table in just 20 minutes!

Ingredients

  • 1 lb (500 g) lean ground beef
  • 1 package Old El Paso™ original taco seasoning mix
  • 1/2 cup water
  • 1 1/4 cups red enchilada sauce (from 28 oz/794 g can)
  • 1 can (19 oz/540 mL) pinto beans, drained, rinsed
  • 6 Old El Paso™ medium flour tortillas (6 inch), cut in 1-inch strips
  • 1 cup shredded Mexican cheese blend
  • 3 tablespoons chopped fresh cilantro

    In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain.

    Add taco seasoning mix, water, enchilada sauce and beans. Cook 3 to 5 minutes, stirring frequently, until sauce thickens. Remove from heat.

    Stir in tortilla strips; top with cheese. Cover skillet; set aside 3 to 4 minutes or until cheese is melted. Sprinkle with cilantro.
