Ingredients

  • 1/2 cup (125 mL) garden vegetable-flavoured cream cheese
  • 1/2 pkg (8 large) Old El Paso* Smart Fiesta* made with Whole Grain Tortillas
  • 1 cup (250 mL) lightly packed spinach leaves
  • 1 large tomato, thinly sliced
  • 3/4 cup (175 mL) shredded carrot
  • 8 slices reduced fat Montery Jack or Swiss cheese
  • 1/2 cup (125 mL) chopped yellow pepper

Steps

    Spread 2 tablespoons cream cheese over each tortilla. Top with spinach and tomato to within 1 inch of edge. Sprinkle with carrot. Top with cheese. Sprinkle with bell pepper.

    Roll up tortillas tightly. Serve immediately, or wrap securely with plastic wrap and refrigerate no longer than 24 hours.
