Spaghetti and Spicy Meatballs

Vegetarian meatballs? Who would have guessed?! Enjoy classic spaghetti with red sauce.

Ingredients

  • 1 pkg (454 g) uncooked spaghetti
  • 2 cups (500 mL) cooked white rice
  • 1/2 cup (125 mL) quick-cooking oats
  • 1/2 cup (125 mL) chopped onion
  • 1/4 cup (50 mL) bread crumbs
  • 1/4 cup (50 mL) milk
  • 1 tbsp (15 mL) chopped fresh or 1 tsp (5 mL) dried basil leaves
  • 2 tsp (10 mL) chopped fresh or 1/2 tsp (2 mL) dried oregano leaves
  • 1/4 tsp (1 mL) ground red pepper (cayenne)
  • 1 egg, beaten
  • 1 cup (250 mL) Fibre 1* Original Cereal, finely crushed
  • 1 tbsp (15 mL) vegetable oil
  • 2 cups (500 mL) spaghetti sauce
  • Shredded Parmesan cheese, if desired

    Cook and drain spaghetti as directed on package.

    In large bowl, mix rice, oats, onion, bread crumbs, milk, basil, oregano, red pepper and egg. Shape into 12 balls. Roll balls in crushed cereal.

    In large skillet, heat oil over medium heat. Cook balls in oil about 10 minutes, turning occasionally, until golden brown.

    Heat spaghetti sauce until hot. Serve sauce and rice balls over spaghetti. Sprinkle with cheese.

    Variation: Decrease the amount of ground red pepper for a milder version of this recipe.

    Did You Know: These "meatballs" are rolled in a small amount of Fibre 1* Original Cereal to give them a golden brown colour and a bit of crunch.
