Ingredients

  • Dressing
  • 1/2 cup (125 mL) sugar
  • 2 tsp (10 mL) finely chopped onion
  • 1/2 tsp (2 mL) salt
  • 1/3 cup (75 mL) lemon juice
  • 1 tsp (5 mL) Dijon mustard
  • 2/3 cup (150 mL) vegetable oil
  • 1 tbsp (15 mL) poppy seed
  • Salad
  • 1 large head romaine lettuce, torn into bite-size pieces (about 10 cups/2.5 L)
  • 1 cup (250 mL) shredded Swiss Cheese
  • 1 cup (250 mL) cashews
  • 1/4 cup (50 mL) sweetened dried cranberries
  • 1 medium apple, cubed (1 cup/250 mL)
  • 1 medium pear, cubed (1 cup/250 mL)

    In blender or food processor, place sugar, onion, salt, lemon juice and mustard; cover and process until blended.

    With machine running, add oil in slow steady stream, processing until thick and smooth. Add poppy seed; process a few seconds to mix.

    In large serving bowl, mix all salad ingredients. Pour dressing over salad; toss to coat.

  • Tip 1
    Tip : If time is short, purchase a bottle of poppy seed dressing. You need approximately 1 cup. Toss salad with 1/2 cup dressing and then add additional as needed.
