Tarragon Crusted Roast Beef

Ingredients

  • 1 boneless beef top round roast (3 to 4 lb/1.5 to 2 kg)
  • 2 tsp (10 mL) salt
  • 1 tsp (5 mL) freshly ground pepper
  • 6 cloves garlic finely chopped
  • 2 tbsp (30 mL) dried tarragon leaves
  • 2 tbsp (30 mL) olive oil
  • Fresh tarragon sprigs, if desired

    Heat oven to 450ºF. Spray shallow roasting pan with cooking spray; place beef in pan. In small bowl, mix salt, pepper, garlic, dried tarragon and oil. Rub mixture on all sides of beef.

    Bake uncovered 15 minutes. Reduce oven temperature to 350ºF. Bake 30 to 40 minutes longer or until of desired doneness. Cover; let stand 15 minutes before slicing. Garnish with tarragon sprigs.

    Cooking Tip: Starting the beef at a high temperature gives it a nice crust. Thinly slice beef for the best texture. Leftovers make great sandwiches.
