Fresh Vegetable Minestrone

Ingredients

  • 1 box Hamburger Helper* Cheesy Shells
  • 4 cups (1 L) reduced-sodium chicken broth
  • 1 cup (250 mL) water
  • 1 tsp (5 mL) Italian seasoning
  • 1 cup (250 mL) sliced carrots
  • 1 can navy or pinto beans (19 oz/540 mL), drained, rinsed
  • 1 can (14 oz/398 mL) diced tomatoes with Italian-style herbs, undrained
  • 1 medium zucchini, cut in half lengthwise, then cut crosswise into 1/4-inch (6 mm) pieces
  • 1/4 cup (50 mL) shredded Parmesan cheese
  • 1 tbsp (15 mL) sliced fresh basil leaves, if desired

    In 4-quart Dutch oven, mix uncooked pasta and sauce mix (from Hamburger Helper box), the broth, water, Italian seasoning and carrots. Heat to boiling. Reduce heat; cover and simmer 15 minutes, stirring occasionally.

    Stir in beans, tomatoes and zucchini. Cover; cook about 10 minutes longer, stirring occasionally, until pasta and vegetables are tender.

    Ladle into bowls. Sprinkle with cheese and basil.
