Mexican Beer Cheese Dip

This next level mashup of beer cheese dip and queso dip is quick, easy and a little unexpected.

Ingredients

  • 2 packages (250 g each) Kraft™ Velveeta™ original cheese, cut into 1/2-inch cubes
  • 6 oz beer (from 12-oz bottle)
  • 1 can (127 mL) Old El Paso™ chopped green chilies
  • 2 cloves garlic, finely chopped
  • 1 tablespoon Old El Paso™ taco seasoning mix (from 28 g package)
  • 1 container (250 mL) sour cream (1 cup)
  • 1/4 cup diced tomato
  • 2 tablespoons chopped fresh cilantro leaves
  • Tortilla chips for dipping, as desired

    In 2-quart microwavable bowl, mix cheese, beer, green chilies, garlic and taco seasoning mix. Microwave uncovered on High 3 minutes; stir, then microwave 3 to 5 minutes longer or until mixture can be stirred smooth.

    Stir in sour cream, and top with diced tomato and cilantro. Serve with chips.

    We preferred the flavour of an amber lager for this recipe, but any Pilsner or lager will work.
  • Tip 2
    Opt for Roma tomatoes when purchasing fresh tomatoes in winter and spring. During the off season, they tend to be riper and less mealy than other varieties.
