Ingredients

  • 1 tbsp (15 mL) olive or vegetable oil
  • 1 tbsp (15 mL) chopped fresh or 1 tsp (5 mL) dried basil leaves
  • 1 clove garlic, finely chopped
  • 2 cups (500 mL) chopped deli rotisserie chicken (2 to 2 1/2 lb/1 to 1.5 kg chicken)
  • 1/2 cup (125 mL) chopped drained oil-packed sun-dried tomatoes
  • 1/4 cup (50 mL) sliced ripe olives
  • 2 cans (19 oz/540 mL) Great Northern Beans or Cannellini Beans, drained, rinsed

    In 10-inch skillet, heat oil over medium heat. Cook basil and garlic in oil 3 minutes, stirring frequently.
