Balsamic vinegar, Italian seasoning and garlic powder add bold flavours to a snack mix that will become a family favourite.

Ingredients

  • 4 cups (1 L) Rice Chex* cereal
  • 1/4 cup (50 mL) salted soy nuts (roasted soybeans)
  • 2 tbsp (25 mL) olive or canola oil
  • 4 tsp (20 mL) balsamic vinegar
  • 1 tsp (5 mL) garlic powder
  • 1 tsp (5 mL) Italian seasoning
  • 5 cups (1.25 L) popped fat-free or reduced fat butter flavour microwave popcorn
  • 3 tbsp (45 mL) shredded or grated Parmesan cheese

    In large microwavable bowl, mix cereal and soy nuts.

    In small bowl, mix oil, vinegar, garlic powder and Italian seasoning. Pour over cereal mixture, stirring to coat. Stir in popcorn until well mixed.

    Microwave uncovered on High 2 minutes. Sprinkle with cheese. Microwave 1 minute longer, thoroughly stirring after 30 seconds. Spread on waxed paper to cool. (Cereal will crisp as it cools.) Store in airtight container.
