Grilled Lemon-Pesto Shrimp and Scallops

Grilling imparts a pleasant smoky flavour to shrimp and scallops coated in store-bought pesto. Have it ready in 25 minutes.

Ingredients

  • 1 lb (500 g) uncooked peeled deveined larg shrimp. thawed if frozen and tails peeled
  • 1 lb (500 g) uncooked sea scallops, thawed if frozen
  • 1/4 cup (50 mL) refrigerated basil pesto
  • 1 tsp (5 mL) grated lemon peel
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) coarse ground pepper

Steps

    Heat coals or gas grill for direct heat. In large bowl, mix all ingredients. Place seafood mixture in grill basket (grill “wok”).

    Cover and grill seafood mixture over medium heat 10 to 12 minutes, shaking basket or stirring seafood mixture occasionally, until shrimp are pink and firm and scallops are white.

  • Tip 1
    If you don’t have a grill basket, double a sheet of heavy-duty foil and poke several holes in it. Then grill this dish according to the recipe.
