Flaky Date-Walnut Pastry

If you're not fond of dates, finely chopped dried apricots can be used.

Ingredients

  • 1 pkg Pillsbury* Refrigerated Pie Crusts, softened as directed on box
  • 1/2 cup (125 mL) granulated sugar
  • 1/4 cup (50 mL) butter or margarine, softened
  • 1/4 cup (50 mL) all-purpose flour
  • 1/2 tsp (2 mL) ground cinnamon
  • 1/2 cup (125 mL) finely chopped dates
  • 1/2 cup (125 mL) finely chopped walnuts
  • 1/2 cup (125 mL) flaked coconut
  • Water
  • 1 egg, beaten

    Heat oven to 375ºF. Remove 1 pie crust from pouch; place crust flat on ungreased baking sheet or pizza pan.

    In large bowl, mix sugar and butter until well blended. Stir in flour and cinnamon. Stir in dates, walnuts and coconut. Spoon filling onto crust on baking sheet; spread to within 1 inch of edge. Brush crust edge with water.

    Remove second pie crust from pouch. Place crust over filling; crimp edge to seal. Brush top with beaten egg.

    Bake 20 to 25 minutes or until golden brown. Cool 30 minutes. Serve warm or cool.
