Ingredients

  • 6 (10-inch/2.5 cm) skewers
  • 1 onion, cubed
  • 18 cherry tomatoes
  • 1 lb (500 g) boneless pork chops, 1 inch (2.5 cm) thick, cut into 1-inch (2.5 cm) cubes
  • 1 tbsp (15 mL) basil pesto
  • 1 tbsp (15 mL) olive oil

Steps

    Heat grill pan over medium heat.

    On each skewer, thread onion, tomato and pork, repeating twice.

    In small bowl, mix pesto and olive oil. Brush mixture on skewers.

    Grill about 6 minutes on each side or until pork is no longer pink in centre.

    Substitution: Substitute sweet onion for regular onion.

    Tip: If using wooden skewers, soak them for at least 10 minutes in water before using.
