Caribbean Black Bean Pizza

Ingredients

  • 1 can Pillsbury* Pizza Crust
  • 1 cup (250 mL) no-salt-added tomato sauce
  • 2 cans (19 oz/540 mL) black beans, drained, rinsed
  • 1 can (8 oz) pineapple tidbits in juice, well drained
  • 1/2 fresh lime or 4 tsp (20 mL) lime juice
  • 2 tbsp (25 mL) chopped fresh cilantro
  • 1 1/2 cups (375 mL) shredded mozzarella cheese

    Heat oven to 425ºF. Spray or grease 15x10x1-inch baking sheet with sides. Unroll dough in pan. Starting at centre, press out dough to edge of pan.

    Spread tomato sauce evenly over crust. Top with beans and pineapple. Squeeze lime juice over toppings. Top with cilantro and cheese.

    Bake 12 to 15 minutes, or until bottom of crust is deep golden brown. Cut into 6 servings.

  • Tip 1
    Substitution: If desired, 1 cup (250 mL) chopped, reduced fat, smoked turkey breast can be substituted for 1 can of the beans.
