Caprese Pork Chops

Mozzarella melted atop grilled pork chops, finished with fresh tomatoes and basil. This may be the best dinner of the summer.

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon fresh-ground pepper
  • 4 centre cut pork chops
  • 8 oz (226 g) fresh mozzarella, sliced
  • 1 pint (2 cups) cherry tomatoes, halved
  • 1 oz (28 g) fresh basil leaves

    Preheat oven to 375°F.

    Heat a cast iron grill pan over high heat. Drizzle with olive oil.

    Season pork chops with salt and pepper and place in hot grill pan. Cook 4 to 5 minutes. Flip pork chops and cook on second side for 3 to 4 minutes more.

    Top each pork chop with slices of mozzarella. Transfer to oven. Bake for 12 to 15 minutes, or until cheese melts and pork chops are cooked through (internal temperature of 145°F).

    Top with tomatoes and fresh basil before serving.

Expert Tips

  • Tip 1
    To Grill: Cook pork chops over a grill heated to high, then flip to second side and reduce heat to medium-low. Place cheese on top of pork chops, close the grill and cook until cheese is melted and meat is cooked through (internal temperature of 145°F).
  • Tip 2
