Bacon-Cheddar Muffins

Ingredients

  • 227 g (8 oz) maple smoked bacon, cut into 1-inch pieces
  • 1 egg
  • 2 cups (500 mL) Bisquick* Mix
  • 3/4 cup (175 mL) shredded Cheddar cheese
  • 3/4 cup (175 mL) milk
  • 2 tbsp (25 mL) butter or margarine, melted
  • 1/4 tsp (1 mL) chili powder

    Heat oven to 400ºF. Place paper baking cup in each of 12 regular-size muffin cups; spray paper cups with nonstick cooking spray.

    In large skillet, cook bacon over medium-high heat, stirring frequently, until crisp. Remove from skillet; drain on paper towel.

    Meanwhile, in medium bowl, beat egg slightly. Stir in remaining ingredients and bacon just until moistened. Spoon batter evenly into cups.

    Bake 16 to 19 minutes or until golden brown. Immediately remove from pan to cooling rack. Serve warm.
