With no crust to roll, this scrumptious coconut pie is incredibly easy to make.

Ingredients

  • 1/2 cup (125 mL) BISQUICK* mix
  • 2 cups (500 mL) milk
  • 1 cup (250 mL) flaked or shredded coconut
  • 3/4 cup (175 mL) sugar
  • 1/4 cup (50 mL) butter or margarine, melted
  • 1 1/2 tsp (7 mL) vanilla
  • 4 eggs

    Heat oven to 350°F (180°C). Grease or spray 9-inch (23 cm) pie plate with non-stick cooking spray.

    Stir all ingredients until blended. Pour into pie plate.

    Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cool completely. Cover and refrigerate any remaining pie.

    Tip: Ever wonder why there is such a difference in the price among vanilla extracts? Pure vanilla extract gets its flavor from extracting real vanilla beans and is more expensive. Imitation vanilla, on the other hand, is created from various artificial flavorings and therefore less costly.
