A twist on a family-favourite meal, this skillet combines the flavours of sloppy joes but can be eaten out of a bowl!

Ingredients

  • 1 lb (500 g) lean ground beef
  • 1 onion, peeled and diced
  • 1 package (1.31 oz) sloppy joe seasoning mix
  • 1 can (14 oz/398 mL) tomato sauce
  • 1 can ( 14 oz/398 mL) diced tomatoes, undrained
  • 1 jar (12 oz) roasted red bell peppers, diced and juice reserved
  • 12 oz uncooked rotini pasta (3 cups)

    In 10-inch skillet, cook ground beef and onion, over medium-high heat until beef is thoroughly cooked, breaking up beef as it cooks. Drain.

    Add sloppy joe seasoning mix, tomato sauce, diced tomatoesand roasted red bell peppers. Stir to combine.

    Heat to boiling over medium-high heat. Add rotini pasta; toss until pasta is submerged. Cover and cook 7 to 8 minutes, stirring occasionally, until pasta is tender.

    Top with a sprinkle of your favourite cheese, if desired.
  • Tip 2
    Don't have roasted red bell peppers? Try using a diced fresh red bell pepper, and cook with the onions.
