Ingredients

  • 1 pkg Old El Paso* Smart Fiesta* Hard Taco Dinner Kit
  • 1/2 cup (125 mL) chopped green pepper
  • 3/4 lb (375 g) uncooked deveined peeled medium shrimp, thawed if frozen, tail shells removed
  • 3/4 cup (175 mL) shredded reduced fat Mexican cheese blend
  • 3/4 cup (175 mL) shredded lettuce

    In large nonstick skillet, heat 1/2 cup water, taco seasoning mix and pepper over medium-high heat, stirring frequently, until warm.

    Stir in shrimp. Cook 3 to 4 minutes, turning shrimp occasionally, until shrimp are pink.

    Fill each taco shell with about 1/4 cup shrimp mixture. Top with cheese, lettuce and taco sauce.

    Tip: Serve tacos immediately. If left to stand, the shells will become soggy.
