Ingredients

  • 3 cups (750 mL) CHEERIOS* cereal, finely crushed
  • 3/4 tsp (3 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 1/4 cup (50 mL) milk
  • 2 tbsp (25 mL) honey
  • 1 tbsp (15 mL) mustard
  • 1 lb (500 g) boneless, skinless chicken breast, cut into 1-inch (2.5 cm) pieces
  • 2 tbsp (25 mL) butter or margarine, melted (optional)

    Heat oven to 400°F (200°C). Spray 9x13-inch (23x33 cm) rectangular pan with non-stick cooking spray.

    Stir together cereal, salt and pepper; set aside.

    Stir together milk, honey and mustard in medium bowl until blended.

    Dip chicken into milk mixture, shake off excess; coat with cereal mixture.

    Place chicken in pan; drizzle with butter, if desired.

    Bake 10 to 15 minutes or until crust is golden and chicken is no longer pink in centre. Serve with favorite dipping sauce.

    Tip: To crush Cheerios*: Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin or place in blender or food processor.
