Peach-Cinnamon Fritters

Ingredients

  • Vegetable oil for deep frying
  • 2 cups Original Bisquick™ mix
  • 1/2 cup cold water
  • 1 egg
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 2 large peaches, peeled and sliced
  • 1/4 cup icing sugar

Steps

    In deep fat fryer or heavy saucepan, heat 3 inches oil over medium-high heat to 350°F.

    In large bowl, mix Bisquick™ mix, cold water, egg, sugar and cinnamon. Fold in peaches.

    Drop dough by rounded tablespoonfuls into hot oil; fry 2 to 3 minutes on each side until golden brown. Remove from oil with slotted spoon; place on paper towel-lined plate to drain. Sprinkle with icing sugar, and serve.

    You can use frozen peaches. Do not thaw before using.

    For a fun variation, roll hot fritters in cinnamon-sugar mixture of 1 cup granulated sugar and 1 tablespoon ground cinnamon.
