Oatmeal-Brown Sugar Pancakes with Banana-Walnut Syrup

Ingredients

  • 2 tbsp (25 mL) butter or margarine
  • 1/4 cup (50 mL) chopped walnuts
  • 2 bananas, sliced
  • 1 cup (250 mL) maple-flavoured syrup
  • 2 cups (500 mL) Bisquick* Mix
  • 1/2 cup (125 mL) old-fashioned or quick-cooking oats
  • 2 tbsp (25 mL) packed brown sugar
  • 1 1/4 cups (300 mL) milk
  • 2 eggs

    In 1 1/2-quart saucepan, melt butter over medium heat. Add walnuts; cook, stirring occasionally, just until walnuts and butter begin to brown. Add bananas; stir to coat with butter. Stir in syrup; reduce heat to low. Cook until warm. Keep warm while making pancakes.

    Brush griddle or skillet with vegetable oil; heat griddle to 375ºF, or heat skillet over medium heat.

    For each pancake pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden brown. Serve with warm syrup.

  • Tip 1
    Success: Butter can burn quickly, so watch it carefully when it's browning. It should be an even golden brown colour and just begin to smell toasty.
