Fruited Tabbouleh with Walnuts and Feta

Ingredients

  • 1 cup (250 mL) uncooked bulgur
  • 1 cup (250 mL) boiling water
  • 1/4 cup (50 mL) orange juice
  • 2 tbsp (30 mL) olive oil
  • 1/2 medium unpeeled cucumber, seeded, chopped (about 1 cup/250 mL)
  • 1/2 cup (125 mL) chopped red onion
  • 1/2 cup (125 mL) sweetened dried cranberries
  • 1/3 cup (75 mL) loosely packed fresh flat-leaf (Italian) parsley, chopped
  • 1/3 cup (75 mL) loosely packed fresh mint leaves, chopped
  • 1 tbsp (15 mL) grated orange peel
  • 1/2 tsp (2 mL) salt
  • 1 orange, peeled, sectioned and chopped
  • 1/3 cup (75 mL) chopped walnuts, toasted
  • 1/2 cup (125 mL) crumbled feta cheese

    Place bulgur in large heatproof bowl. Pour boiling water over bulgur; stir. Let stand about 1 hour or until water is absorbed.

    Stir in orange juice, oil, cucumber, onion, cranberries, parsley, mint, orange peel and salt; toss well. Cover; refrigerate 2 to 3 hours or until well chilled.

    Just before serving, stir in chopped orange. Sprinkle with walnuts and cheese.

    To Toast Walnuts: Spread in ungreased shallow pan. Bake uncovered at 350F 6 to 10 minutes, stirring occasionally, until golden brown.
