A true country breakfast, this variation on a sweet cobbler comes together quickly for a satisfying start to the day.

Ingredients

  • 1 medium baking potato
  • 1/4 cup (60 mL) melted butter, divided
  • 3 slices peameal bacon, chopped
  • 1/2 cup (125 mL) chopped broccoli florets
  • 1/4 cup (60 mL) chopped onion
  • 1/4 cup (60 mL) chopped red pepper
  • 1/2 tsp (2 mL) each salt and pepper, divided
  • 8 eggs
  • 1/2 cup (125 mL) milk, divided
  • 1/2 cup (125 mL) Gluten Free Bisquick™
  • 1/4 cup (60 mL) shredded Cheddar cheese

    Using fork, poke a few holes in potato, then place in microwave-safe dish. Cook on High for 5 minutes. Let cool; peel and cut into cubes.

    Meanwhile, heat 1 tbsp (15 mL) melted butter in large nonstick skillet set over medium heat; add bacon, broccoli, onion and red pepper. Cook for 5 minutes; add potato. Season with 1/4 tsp (1 mL) salt and pepper; cook for 2 to 3 minutes or until potatoes start to brown slightly. Divide mixture among 4 ramekins.

    Preheat oven to 425°F (220°C). In bowl with spout or measuring cup, whisk together eggs, 1/4 cup (60 mL) milk and remaining salt and pepper; pour evenly over potato mixture in each ramekin.

    In bowl, stir together Bisquick™, cheese, and remaining melted butter and milk. Dollop mixture evenly on top of each ramekin.

    Transfer ramekins to rimmed baking sheet; bake for 12 to 15 minutes or until golden and cooked through.
