Crispy Baked Fish with Salsa

Ingredients

  • 3 tbsp (45 mL) butter or margarine
  • 2/3 cup (150 mL) Bisquick* Mix
  • 1/4 cup (50 mL) yellow cornmeal
  • 1 tsp (5 mL) chili powder
  • 1/4 tsp (.5 mL) salt
  • 1 egg
  • 1 lb (500 g) orange roughy or other mild-flavoured fish fillets
  • 1 1/2 cups (375 mL) Old El Paso* Thick N' Chunky Salsa

    Heat oven to 425ºF. In 13x9-inch pan, heat butter in oven 2 to 3 minutes or until melted.

    In shallow dish, mix Bisquick mix, cornmeal, chili powder and salt. In another shallow dish, beat egg. Dip fish into egg, then coat with Bisquick mixture. Place in pan.

    Bake 10 minutes; turn fish. Bake about 15 minutes longer or until fish flakes easily with fork. Serve with salsa.
