Here's a new holiday dessert idea your entire clan will enjoy. Cranberries, dried apricots and orange zest make this sweet, moist pound cake a perfect ending to any festive meal.

Ingredients

  • 1 pkg (510 g) Betty Crocker* Super Moist French Vanilla, Golden or White Cake Mix
  • 1 pkg (102 g) instant vanilla pudding mix
  • 1 tsp (5 mL) grated orange rind
  • 1/2 cup (125 mL) butter, melted
  • 4 eggs
  • 1 cup (250 mL) milk
  • 1 1/2 cups (375 mL) chopped frozen or fresh cranberries
  • 1 cup (250 mL) dried apricots, coarsely chopped
  • 1 cup (250 mL) Betty Crocker* Creamy Deluxe or Whipped White or Vanilla Frosting
  • 1 tbsp (15 mL) thawed frozen orange juice concentrate

    Heat oven to 350°F (180°C). Lightly grease or spray one 12-cup (3 L) fluted tube pan (Bundt cake pan) or two 8x4-inch (1.5 L) loaf pans.

    In large bowl, combine cake mix, pudding mix and orange rind. Add melted butter, eggs and milk and beat according to package directions. Gently fold in chopped cranberries and apricots.

    Spoon batter into prepared pan(s), distributing evenly. Bake for 55 to 65 minutes in fluted tube pan, 50 to 55 minutes if using loaf pans, or until a toothpick inserted in centre comes out clean.

    Cool in pan on a wire rack for 20 minutes. Remove from pan and cool completely before glazing.

    Tip: To Make Easy Orange Glaze: In small glass bowl or measuring cup, stir together frosting and orange juice concentrate. Microwave on medium power for 30 to 45 seconds or until it is a good consistency for drizzling. Using a spoon, drizzle evenly over the cooled cake(s).
