Ingredients

  • 2 tbsp (30 mL) butter or margarine
  • 1 1/2 cups (375 mL) cooked corned beef or lean cooked beef
  • 2 tbsp (30 mL) chopped fresh parsley
  • 1 tsp (5 mL) chopped fresh or 1/4 tsp (1 mL) dried thyme leaves
  • 2 medium potatoes, cooked and chopped (2 cups/500 mL)
  • 1 small bell pepper, chopped (1/2 cup/125 mL)
  • 4 medium green onions, sliced (1/4 cup/50 mL)
  • 2 hard-cooked eggs, chopped
