Chocolate Cookie Sandwiches with Rainbow Chip Frosting

These cookies pay homage to the classic chocolate sandwich cookie, but are made even better with rainbow chip frosting in the middle! Recipe by Michelle Lopez.

Ingredients

  • 1 pouch Betty Crocker™ sugar cookie mix
  • 3 tablespoons unsweetened baking cocoa
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 1 container rainbow chip frosting

Steps

    Heat oven to 350° F. Line 2 baking sheets with parchment paper; set aside.

    In medium bowl, beat cookie mix and cocoa. Add melted butter and egg; mix until soft pale brown dough forms.

    On lightly floured surface, roll dough 1/4 inch thick. Use 1 1/2-inch round cutter to cut out circles for cookie sandwiches. Place 1 inch apart on baking sheets.

    Bake 8 minutes; transfer to cooling rack to cool completely.

    Use offset spatula or butter knife to spread a dollop of frosting on flat side of one cookie. Press another cookie on frosting, flat sides together, to make a sandwich. Repeat to use remaining cookies.

Expert Tips

  • Tip 1
    If you don’t have a 1 1/2-inch round cookie cutter, you can use an upside-down shot glass or top of an empty bottle!
  • Tip 2
    If dough is too soft to work with and starts sticking to your rolling pin, transfer to freezer 5 minutes to allow it to firm up. Alternatively, you can also roll out the dough between two pieces of waxed or parchment paper.
