Parmesan-Lemon Chicken Bake

This all-in-one Parmesan crusted chicken and rice bake makes an easy and delicious dinner.

Ingredients

  • 1 lb (500 g) chicken tenders or boneless chicken breasts, cut into bite-size pieces
  • 1 cup uncooked regular long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 1/2 cups shredded Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon grated lemon peel
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

    Heat oven to 375°F. Spray 8-inch square (2-quart) baking dish with cooking spray.

    In baking dish, mix all ingredients well.

    Bake 45 to 50 minutes or until rice is tender and most of the liquid is absorbed. Let stand 10 minutes before serving.
