Chocolate Raspberry Marbled Cheesecake Squares

Ingredients

  • 1 pack chocolate chip cookie mix
  • 3 eggs
  • 1/2 cup butter (or margarine), softened
  • 1/4 cup sugar
  • 1 pack plain cream cheese (8 oz)
  • 1 tub chocolate cream cheese (8 oz)
  • 1 cup raspberries

    Preheat oven to 325˚F.

    In a bowl, use a spoon to mix together one egg, the butter or margarine, and the cookie mix. Spray a 9-inch pan with non-stick cooking spray. Spread the cookie mix into the pan. Bake for 15 minutes. Cool for 10 minutes.

    While it cools, put the plain cream cheese, an egg, and the sugar in a medium-sized bowl. Beat with an electric mixer until the cream cheese is smooth.

    Put the chocolate cream cheese in another bowl and add the last egg. Beat with an electric mixer until the cream cheese is smooth.

    Crush the raspberries with a fork and strain through a sieve to remove the seeds. You should be left with 1/4 cup of raspberry sauce.

    To make the squares, dollop spoonfuls of the chocolate mixture in a row, then repeat with the plain cream cheese mixture. You will have four rows.

    Add the raspberry sauce in a line on top of the cream cheese. With a toothpick, swirl the raspberry sauce with the cream cheese.

    Bake for 35 minutes. Once cooked through, cool for one hour at room temperature and then two more hours in the refrigerator.

    Cut into squares and serve.
