Created Nov 22, 2010
Ingredients
- 2 pkgs Betty Crocker* Chocolate Chunk Supreme Brownie Mix
- 1/2 cup (125 mL) vegetable oil
- 1/2 cup (125 mL) water
- 1 1/2 tsp (7 mL) almond extract
- 2 eggs
- 4 cups (1 L) vanilla ice cream, slightly softened
- 1 can (398 mL) bing cherries, well drained, sliced in half
- 1/3 cup (75 mL) chocolate-flavoured syrup
Steps
-
Heat oven to 350ºF. Grease 13x9-inch pan with shortening. In large bowl, stir brownie mixes, oil, water, almond extract and eggs with spoon until well blended. Pour batter into pan.
-
Bake 28 to 30 minutes or until toothpick inserted in centre comes out clean. Cool completely, about 1 hour.
-
In another large bowl, gently mix ice cream and cherries. Place heaping spoonfuls of ice cream mixture over brownies; lightly press with back of spoon to smooth. Freeze at least 1 hour before serving.
-
If too firm to cut, let stand at room temperature 10 minutes. Drizzle individual servings with syrup. Garnish with a mint leaf and a maraschino cherry, if desired.
