Bisquick* Apple Cranberry Sage Chicken

Ingredients

  • 2/3 cup (150 mL) grape jelly
  • 2 tbsp (25 mL) butter or margarine
  • 1 large unpeeled red cooking apple, cut into 2-inch (5 cm) chunks
  • 1 medium stalk celery
  • 1/2 cup (125 mL) fresh or frozen (thawed) cranberries
  • 3/4 cup (175 mL) BISQUICK* mix
  • 1/2 tsp (2 mL) ground sage
  • 3/4 tsp (3 mL) chopped fresh thyme leaves
  • 2 tbsp (25 mL) water
  • 4 boneless, skinless chicken breasts (about 1 1/4 lbs/625 g)

    Heat oven to 350°F (180°C). In 1 1/2 -qt (1.5 L) saucepan, melt jelly and butter over medium heat, stirring occasionally. Stir in apple, celery and cranberries; remove from heat.

    In shallow dish, mix Bisquick* mix, sage and thyme. In another shallow dish, place water. Dip chicken into water, then coat with Bisquick* mixture. Spray large skillet with non-stick cooking spray; heat over medium-high heat. Cook chicken in skillet 6 to 8 minutes, turning once, until coating is brown.

    Place chicken in ungreased 9X13-inch (23x33 cm) rectangular baking pan. Spoon cranberry mixture over chicken. Bake 40 to 45 minutes or until juice of chicken is clear when center of thickest part is cut (170°F/77°C).

    Kitchen Tip: Variation: Stir in 2/3 cup (150 mL) pecan halves with the cranberries.

    Like the flavour of baked apples? Use two apples instead of one in this recipe.
  • Tip 3
    Substitution: 3/4 tsp (3 mL) fresh thyme can be replaced by 1/4 tsp (1mL) dried thyme leaves.
