Have you ever considered using an avocado for dessert? Chances are you haven't. In fact most people don't even know it's possible. However, avocado is a wonderful ingredient that you can use to make a delicious dessert. With the help of Betty Crocker, you and your avocado can turn little cupcakes into a yummy treat. Try them at your next party.

Ingredients

  • 1 box Betty Crocker™ SuperMoist™ lemon cake mix
  • 1 avocado, mashed
  • 3/4 almond milk
  • 3 eggs
  • Cupcake liners
  • 1 container Betty Crocker™ Whipped cream cheese frosting, place in refrigerator until cold for easier piping
  • 1/2 cup of fresh grated lemon peel
  • 3 tablespoon of decorating yellow coloured sugar

    Heat the oven at 350°F; place the cupcake liners on a regular size cupcake pan. With an electric mixer add the mashed avocado to a large bowl and the milk; mix together, when ready. Stir in eggs and cake mix. Beat until getting a smooth and consistent cake batter. Spoon the preparation in each cupcake liners and bake until golden brown for about 20-30 minutes. Remove from oven and place in a wire rack until cold.

    Remove frosting from refrigerator and stir in a third of the grated lemon peel, combine well. Place inside a piping bag and use a thick tip, to decorate the cupcakes.

  • Tip 1
    A good technique for applying the frosting is to make round swirls. Sprinkle the lemon peel, place an avocado piece on top and yellow coloured sugar as a finishing touch.
