Ingredients

  • 1 1/2 cups (375 mL) whole wheat flour
  • 1 cup (250 mL) granulated sugar
  • 1 tsp (5 mL) cinnamon
  • 1/2 tsp (2 mL) baking soda
  • 1/4 tsp (1 mL) baking powder
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) nutmeg
  • 1 cup (250 mL) finely shredded peeled apple
  • 1/4 cup (50 mL) apple sauce (no sugar added)
  • 2 eggs
  • 1/4 tsp (1 mL) lemon zest
  • 1 cup (250 mL) walnuts or pecans (optional)

    Heat oven to 350ºF. Spray bottom only of 9x5-inch loaf pan with nonstick cooking spray.

    In large bowl, combine first seven ingredients (dry ingredients).

    In second bowl, mix together apple, apple sauce, eggs and lemon zest. Add mixture to dry ingredients and stir until just combined. Gently stir in nuts (if using).

    Bake 55 to 65 minutes or until toothpick inserted in centre comes out clean. Cool 10 minutes. Loosen sides of loaf; remove from pan to cooling rack. Cool completely, about 2 hours before slicing.

    Mini Loaves : To make mini loaves, divide batter between 3 lightly greased (or sprayed) mini loaf pans. Bake at 350 for 35 to 40 minutes or until toothpick inserted in middle comes out clean.
