Ingredients

  • 1 Old El Paso* Stand 'n Stuff* Taco Kit
  • 3 tbsp (45 mL) water
  • 3 cups (750 mL) cut up cooked chicken
  • 1 medium red pepper, cut into thin strips
  • 1 can (14 oz/398 mL) baked beans in tomato sauce
  • 2 cups (500 mL) shredded mozzarella or Monterey Jack cheese
  • 8 slices cooked bacon, crumbled

    Heat oven to 400°F (200°C).

    Line 9x13-inch baking pan with parchment paper or foil. Stand taco shells in pan.

    In medium bowl, stir together water, taco seasoning mix and taco sauce (from kit). Add chicken; stir until well combined.

    Fill each shell with about 1/4 cup seasoned chicken. Place pepper strips on chicken. Top each with about 1 1/2 tbsp baked beans and 3 tbsp cheese. Sprinkle with bacon.

    Bake 8 minutes or until thoroughly heated and cheese is melted.

    Time Saver: Deli rotisserie chicken or pre-cooked packaged chicken strips are a great alternative if you don’t have any leftover chicken.
