Pecans and Gouda cheese add flavour, texture and colour to this zippy salad.

Ingredients

  • 10 cups (2.5 L) bite-size pieces fresh spinach
  • 1 pint strawberries, cut in half (2 cups/500 mL)
  • 6 kiwifruit, cut into bite-size pieces (2 cups/500 mL)
  • 2/3 cup (150 mL) broken pecans
  • 2/3 cup (150 mL) julienne strips Gouda or Edam cheese
  • 1/4 cup (50 mL) lime juice
  • 1/4 cup (50 mL) honey
  • 2 tbsp (30 mL) vegetable oil
  • 1 tsp (5 mL) grated gingerroot or 1/2 tsp (2 mL) ground ginger

    In large bowl, mix spinach, strawberries, kiwifruit, pecans and cheese.

    In tightly covered container, shake all remaining ingredients until smooth. Pour over salad; toss to mix.

    Did You Know? : Gouda and Edam cheese are similar in flavour, but Gouda is slightly creamier because of its higher fat content (48 percent compared to Edam's 40). Look for both cheeses in the gourmet cheese section of the grocery store.
