Tangy meat loaf topped with fluffy mashed potatoes make for a meat and potato lovers' paradise!

Ingredients

  • 2 eggs
  • 1 jar or can (14 oz/398 mL) tomato pasta sauce
  • 1 cup (250 mL) Italian style bread crumbs
  • 1 large onion, finely chopped (1 cup/250 mL)
  • 2 tsp (10 mL) Italian seasoning
  • 1/2 tsp (2 mL) salt
  • 2 lb (1 kg) lean ground beef
  • 1 box Betty Crocker* Homestyle Mashed Potatoes (2 pouches)
  • Hot water, margarine or butter, salt and milk, as called for on potatoes box
  • 1/2 cup (125 mL) grated Parmesan cheese

    Heat oven to 375ºF. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, beat eggs. Stir in pasta sauce, bread crumbs, onion, Italian seasoning, salt and beef until well blended. Press mixture in bottom of baking dish.

    Bake 45 to 55 minutes or until meat thermometer inserted in centre of loaf reads 160ºF/71ºC.

    Meanwhile, make both pouches of mashed potatoes as directed on box, using hot water, margarine or butter, salt and milk.

    Spoon any excess juices from baking dish. Spread mashed potatoes over meat loaf; sprinkle with cheese. Bake 10 to 15 minutes longer or until top begins to brown. Let stand 5 minutes before cutting.

    Substitution: One teaspoon each of dried basil and oregano leaves can be substituted for the Italian seasoning.
