Ingredients

  • 1 cup (250 mL) vanilla ice cream or low-fat vanilla ice cream
  • 1/4 cup (50 mL) Peanut Butter Cheerios* cereal, coarsely chopped
  • 2 tsp (10 mL) peanut butter chips, chopped

    Scoop 1/2 cup (125 mL) ice cream onto sheet of plastic wrap; completely wrap ice cream. Use hands to form plastic-wrapped ice cream into ball. Repeat with remaining 1/2 cup ice cream. Freeze 30 minutes or until firm.

    In shallow dish, mix cereal and chopped peanut butter chips.

    Remove firm ice cream from freezer, and unwrap. One at a time, roll each ball in cereal mixture until thoroughly coated, pressing in slightly.
