Stir up a batch of delicious chocolate cookies using whole grain oats and high-fiber cereal.

Ingredients

  • 1 cup (250 mL) butter or margarine, softened
  • 3/4 cup (175 mL) packed brown sugar
  • 1/2 cup (125 mL) granulated sugar
  • 2 eggs
  • 1 cup (250 mL) all-purpose flour
  • 1/2 cup (125 mL) cocoa
  • 1 tsp (5 mL) baking soda
  • 1/4 tsp (1 mL) salt
  • 1 cup (250 mL) Fibre 1* Original Cereal
  • 1 1/2 cups (375 mL) quick-cooking or old-fashioned oats
  • 3/4 cup (175 mL) white vanilla baking chips

Steps

    Heat oven to 350ºF. In large bowl, stir together butter, sugars and eggs. In small bowl, stir together flour, cocoa, baking soda and salt; stir into butter mixture. Stir in cereal, oats and baking chips.

    Onto ungreased baking sheets, drop dough by heaping tablespoonfuls 2 inches apart.

    Bake 9 minutes. Cool 1 to 2 minutes; remove from baking sheets to cooling racks. Cool completely before storing in tightly covered container.

    Substitution:For double chocolate cookies, replace the vanilla chips with semisweet or dark chocolate chips.
