My kids aren't huge fans of vegetables, but they each have their favorite. My eldest loves cucumbers and my baby loves broccoli and carrots. My middle child doesn't like, well, any vegetables, but we can get him to eat a few without gagging/choking. We call that a WIN.

One vegetable that I can cook and they all like is yam (or sweet potato) fries. They're not as good for you as, say, spinach, but they are orange and they are baked and they are GOOD.

This recipe can be done in about a half an hour. One large sweet potato can serve 2-3 people as a side dish. Preheat your oven to 450 degrees, and let's get this party started.

Ingredients:

Two sweet potatoes (You can either peel the potato or leave the skin on - I leave the skin on, as it's full of nutrients and gives the fries a nice texture).

Sea salt

Freshly ground black pepper

Olive oil

Directions:

If you rinse the yams in the sink, make sure you dry them completely. If they're wet the olive oil won't coat the fries very well and you'll be left with limp, soggy fries. We don't want that.

Cut the sweet potatoes in half, unless they are small. Then cut a thin slice from both ends. Thin pieces burn quickly, and nobody wants to eat that.

Take one of the halves of the sweet potato and cut it into large slices about 3/4 inch thick, then cut those into fries. The fries should be 1/2 inch to 3/4 inch thick. Repeat this for the other half of the yam.

Put fries on the baking sheet, sprinkle a heaping dash of sea salt over them, and then apply freshly ground black pepper, to taste. Drizzle with olive oil and mix it all together, well. The fries should look glossy, but shouldn't be swimming in olive oil.

Space out the fries on the baking sheet so that they're evenly spaced and not touching. If they are all bunched together, they will be soggy and not crispy.

Put the fries in the oven for 14 minutes, without opening the oven door. After 14 minutes, take them out and flip them. I usually use my fingers, but you can use tongs or a fork.

Put them back in the oven for 10 minutes or so, depending on your oven.

The fries should be dark brown and crispy. Should you want a lighter brown color, reduce the cooking time for both sides.
