Banana-Chocolate Chip Coffee Cake

Ingredients

  • 2 1/4 cups (550 mL) Bisquick* Mix
  • 1 cup (250 mL) mashed ripe bananas (about 2 medium)
  • 1/2 cup (125 mL) miniature semisweet chocolate chips
  • 1/4 cup (50 mL) granulated sugar
  • 1/3 cup (75 mL) milk
  • 2 tbsp (25 mL) butter or margarine, softened
  • 1/2 tsp (2 mL) ground cinnamon
  • 1 egg
  • 1 cup (250 mL) icing sugar
  • 1 tbsp (15 mL) milk
  • 1/2 tsp (2 mL) vanilla

    Heat oven to 375ºF. Spray 8-inch square pan with nonstick cooking spray. In medium bowl, stir all coffee cake ingredients with wire whisk or fork until blended. Spread in pan.

    Bake 26 to 30 minutes or until golden brown and toothpick inserted in centre comes out clean. Cool 30 minutes.

    In small bowl, mix all glaze ingredients until smooth. If necessary, add additional milk, 1 teaspoon at a time, until thin enough to drizzle. Drizzle glaze over warm coffee cake. Serve warm.
