White Chocolate Macaroon Cookies

Betty Crocker* Sugar Cookie Mix jump-starts the making of a rich white chocolate and coconut cookie.


Cookies
1 pouch Betty Crocker* Sugar Cookie Mix
1/2 cup (125 mL) butter or margarine, softened
1 egg
1 cup (250 mL) flaked coconut
1 cup (250 mL) white vanilla baking chips
1/2 tsp (2 mL) coconut extract
Glaze
1/2 cup (125 mL) white vanilla baking chips
1 tbsp (15 mL) shortening


  • Heat oven to 375ºF. In large bowl, stir all cookie ingredients until dough forms. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet.
  • Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small microwavable bowl, melt 1/2 cup chips and the shortening on High 30 to 60 seconds, stirring every 15 seconds, until melted. Drizzle over cookies.




Tip
Variation : Use semisweet chocolate chips for a slightly different look and flavour.
