The Ultimate Chicken Casserole

Add something tasty to your family's dinner tonight! Serve this yummy casserole made with chicken breasts, broccoli and water chestnuts.


1 tbsp (15 mL) vegetable oil
2 lb (1 kg) boneless chicken breasts, cut into strips

1 pkg (500 g) Green Giant* Valley Selections* Frozen Cut Broccoli, thawed and drained

1 can (218 mL) sliced water chestnuts, drained
1 can (10 oz/284 mL) condensed cream of chicken soup
1/2 cup (125 mL) reduced-fat mayonnaise
1 tsp (5 mL) lemon juice
1/2 cup (125 mL) milk
1/2 tsp (2 mL) curry powder, if desired
1/2 cup (125 mL) shredded reduced-fat Cheddar cheese
1/2 cup (125 mL) dry bread crumbs
1 can (79 g) French-fried onions
1/4 cup (50 mL) slivered almonds


  • Heat oven to 350ºF. Heat oil in 12-inch skillet over medium-high heat. Cook chicken in oil 5 to 6 minutes, stirring occasionally, until chicken is no longer pink in centre. Layer broccoli, water chestnuts and chicken in ungreased rectangular baking dish, 13x9x2 inches.
  • Mix soup, mayonnaise, lemon juice, milk and curry powder; pour over chicken and broccoli. Sprinkle with cheese, bread crumbs, onions and almonds.
  • Cover and bake 30 minutes. Uncover and bake about 15 minutes longer or until broccoli is tender.




Tip
To Make Ahead: Cover baked casserole with aluminum foil. Freeze no longer than 2 months. About 1 hour before serving, heat oven to 350 F. Bake in covered baking dish 45 minutes. Uncover and bake 10 to 15 minutes longer or until hot.
