Southwest Mac and Cheese

Flavourful cheese, colourful veggies and chunky salsa add zip to this Mexican-inspired Mac and Cheese dish.


2 1/3 cups (575 mL) uncooked elbow macaroni or cavatappi pasta (1/2 lb/250 g)
1 cup (250 mL) Old El Paso* Thick N' Chunky Salsa
1 1/2 cups (375 mL) milk
1 can (14floz/398 mL) Green Giant* Cream Style Corn
1 can (12 floz/341 mL) Green Giant* NIBLETS* WHOLE KERNEL CORN or Peaches and Cream Corn
1/4 cup (50 mL) each finely chopped red pepper and green peppers

250 g process cheese product, cubed


  • Mix all ingredients except cheese in large non-stick skillet. Heat to boiling, stirring occasionally; reduce heat.
  • Cover and simmer 10 to 14 minutes, stirring frequently, until macaroni is tender. Stir in cheese until melted.
