Ingredients:

1/4 cup (50 mL) flour
1/2 pouch (35 g) Old El Paso* Taco Seasoning Mix
4 boneless, skinless chicken breasts
1 tbsp (15 mL) vegetable oil
1 3/4 cup (425 mL) Old El Paso* Thick N’ Chunky Salsa
1 tsp (5 mL) sugar
1/4 tsp (1 mL) salt
1 cup (250 mL) Green Giant* Frozen NIBLETS* WHOLE KERNEL CORN
chopped green onions

Method:

Place flour and seasoning mix in a large plastic bag; shake to combine. Shake chicken in mixture until coated.
Heat oil in skillet over medium-high heat. Brown chicken on both sides.
Combine salsa, 1/2 cup (125 mL) water, sugar and salt; pour over chicken. Cover and simmer 10 minutes.
Add corn to skillet, cover and cook 5 minutes.
Serve over hot cooked rice sprinkled with green onions.

Tip: Try adding a sprinkling of fresh chopped cilantro before serving this fast and easy Mexican inspired dish.
