1 box Betty Crocker* SuperMoist* White Cake Mix
1 cup (250 mL) unflavoured carbonated water
1/3 cup (75 mL) vegetable oil
¼ cup (50 mL) rum or 1 tsp (5 mL) rum extract plus ¼ cup (50 mL) water
3 tbsp (45 mL) chopped fresh mint leaves
2 tsp (10 mL) grated lime peel
3 egg whites
Glaze
½ cup (125 mL) butter or margarine
¼ cup (50 mL) water
½ cup (125 mL) rum or 2 tsp (10 mL) rum extract plus ½ cup
(125 mL) water
Garnish
1 cup (250 mL) whipping cream
2 tbsp (25 mL) icing sugar
15 fresh mint leaves, if desired
Shredded lime peel, if desired
