Ingredients:
1 1/4 cups (300 mL) sugar
1/2 cup (125 mL) butter or margarine, softened
2 eggs
1 1/2 cups (375 mL) mashed ripe bananas (3 to 4 medium)
1/2 cup (125 mL) buttermilk
1 tsp (5 mL) vanilla
2 1/2 cups (625 mL) all-purpose flour
1 tsp (5 mL) baking soda
1 tsp (5 mL) salt
1 cup (250 mL) chopped nuts, if desired
Tip : If you don't have 10 mini loaf pans, you can bake in batches. Refrigerate batter between batches and add 3 to 5 minutes to the bake time.Special Touch : Breads make tasty gifts. Package with a colourful dish towel or pot holder.
